Thanksgiving is almost here, that means feasting on holiday food, one of my favorite things! This is a recipe I found in a Halloween themed magazine years ago. I don’t remember the name. I made this for a family gathering and it was very popular. It is a super easy recipe. Picture taken from http://www.bettycrocker.com but the recipe is not.
3 cups all-purpose flour
2 tsps ground cinnamon
1 tsp salt
1 tsp baking soda
2 cups sugar
2 cups canned pumpkin
1 1/4 cups vegetable oil
1 1/2 cups semisweet chocolate chips
In a large bowl, combine the flour, cinnamon, salt and baking soda. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir in the dry ingredients just until moistened. Fold in the chocolate chips. Pour into two greased 8 inch x 4 inch x 2 inch loaf pans.
Bake at 350 degrees for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wires racks.
